Breakfast Bars {Quinoa + Chia + Cranberry + PB}

Mornings that begin with smoothies are on the decline here in Pennsylvania as it is frightfully cold. It’s really not all that bad. I’m still in an adjustment phase and by late December I’ll hardly whine at all. My go-to breakfast in the depths of winter is a toss up between steel-cut oatmeal or sleeping in the middle of my bed under several comforters with my cat huddled next to me for added warmth. If you want to go the oatmeal route I’ve got a post for that. If you want to go the amorphous bed blob route you’re on your own, but I suspect you can figure it out. For these moderately chilly mornings where I can still get out of bed with relative ease, I wanted something more portable, but still nutritionally substantial – enter the quinoa breakfast bar.

Merhaba! {Traveling Istanbul}

If you’ve read my last post, Turkish de Light, then you already know that I was in Istanbul last month. It was such a vibrant city; fantastic sights, ridiculously good food (though I’ll admit, a little tough when you’re gluten-free), and incredibly friendly people. Banana Breakfast Obsession

I saw the recipe on Pinterest over the weekend and I’ve made it twice since then, a clear indicator that I should share. The original recipe is for “fried” bananas as a sweet treat,  but I add some protein and fat to make a perfect Fall breakfast.

Pan-seared Peaches & Steel-cut Oats

Second only to eggs, oatmeal is my favorite breakfast food. More specifically, steel-cut oats. A little crunchy, a little creamy and entirely reminiscent of my childhood. My mom used to make me oatmeal or cream of wheat for breakfast during the colder months of the school year and it was awesome. Unfortunately, due to my body’s love/hate relationship with gluten, cream of wheat is out of the picture. But, I still reach for oatmeal whenever the temperature drops below 50 degrees. Here’s one of my favorites.

Oh hey, Parfait.

As a teenager, the early morning hours and I were not compatible. To be fair, I rarely gave them a chance. Now, the morning is my favorite part of the day. This naturally leads to breakfast being my very favorite meal. This strawberry + walnut + honey parfait is one of my go-to breakfasts (and sometimes afternoon snack and sometimes dessert) mainly because it’s simple and delicious. Side note: if you made Banana + Walnut Pancakes {100% whole wheat} over the weekend, this parfait is even easier as you’ll have all but one of the ingredients on hand.

Banana Walnut Pancakes {100% whole wheat}

I am continually on the hunt for a pancake recipe that uses whole wheat flour without turning out pancakes that have the consistency of an old dish sponge. This recipe is the best I’ve found and after making a few minor tweaks, these were the best 100% whole wheat pancakes I’ve eaten.
