It was a fantastic coincidence that it was Arizona’s restaurant week during our visit. As a result, we ate tons of different food in Scottsdale – so much of it was amazing (if you follow me on Instagram, you probably already know this). But, it’s no coincidence that since my return to the east coast, I’ve been craving southwest food in a big way. 15 minute dinner {broiled salmon + spring mix salad}

This dinner is an absolute staple in my household. It’s healthy, satisfying and only takes 15 minutes to put together. The broiled salmon gives you omega 3 fatty acids and protein. The spring mix adds fiber and vitamin A and you get more omega 3’s, B vitamins and vitamin E from the pine nuts.

Homemade Glass + Surface Cleaner

After reading the book, No More Dirty Looks around two years ago, I’ve been acutely aware of the chemicals in my cosmetics and cleaning supplies. Since then, I have steadily been replacing my chemical laden everyday items with more natural substances. In addition my interest in decreasing the environmental effects of these items, I am also generally pretty sensitive to fragrances and artificial dyes so I try to stay away from them. Oh hey, Parfait.

As a teenager, the early morning hours and I were not compatible. To be fair, I rarely gave them a chance. Now, the morning is my favorite part of the day. This naturally leads to breakfast being my very favorite meal. This strawberry + walnut + honey parfait is one of my go-to breakfasts (and sometimes afternoon snack and sometimes dessert) mainly because it’s simple and delicious. Side note: if you made Banana + Walnut Pancakes {100% whole wheat} over the weekend, this parfait is even easier as you’ll have all but one of the ingredients on hand.

Banana Walnut Pancakes {100% whole wheat}

I am continually on the hunt for a pancake recipe that uses whole wheat flour without turning out pancakes that have the consistency of an old dish sponge. This recipe is the best I’ve found and after making a few minor tweaks, these were the best 100% whole wheat pancakes I’ve eaten.
