Second only to eggs, oatmeal is my favorite breakfast food. More specifically, steel-cut oats. A little crunchy, a little creamy and entirely reminiscent of my childhood. My mom used to make me oatmeal or cream of wheat for breakfast during the colder months of the school year and it was awesome. Unfortunately, due to my body’s love/hate relationship with gluten, cream of wheat is out of the picture. But, I still reach for oatmeal whenever the temperature drops below 50 degrees. Here’s one of my favorites.

Oh hey, Parfait.

As a teenager, the early morning hours and I were not compatible. To be fair, I rarely gave them a chance. Now, the morning is my favorite part of the day. This naturally leads to breakfast being my very favorite meal. This strawberry + walnut + honey parfait is one of my go-to breakfasts (and sometimes afternoon snack and sometimes dessert) mainly because it’s simple and delicious. Side note: if you made Banana + Walnut Pancakes {100% whole wheat} over the weekend, this parfait is even easier as you’ll have all but one of the ingredients on hand.

Hearty + Healthy {Chicken, Veggies + Brown Rice}

I love meals that have protein, vegetables and carbohydrates all in one dish. This dinner is hearty, simple and requires hardly any clean up. It does take some time, but most of the time is just the chicken and veggies baking in the oven. As an added bonus, this recipe serves four and costs under $10.
